Turkey Noodle Soup

Husband received a 20 lb turkey from work! that's a LOT of turkey. 
So, even after our Christmas feast - we had a ton of left-overs. 
This is one of our many turkey meals.
It was SO delicious.






Turkey Noodle Soup:
1c sliced carrots
3/4c chopped onion
4 cloves of garlic
6c of chicken broth (homemade is best)
2c whole wheat egg noodles
1tblsp. soy sauce
2c shredded turkey
bay leaf
pepper
salt
olive oil

Drizzle pan with olive oil and cook onion, garlic and carrots on medium-high heat for about 5 minutes, until onion is translucent. Add celery, and cook for 3 more minutes. Add chicken broth, noodles, turkey, soy sauce, turkey, bay leaf, salt and pepper. Just dump everything in - bring to a boil and then reduce it and simmer it for as long as you can! It tastes best after the ingredients have melded together. 

So yummy.
