It's what's for Dinner







You are going to want to make this..tonight or now! It is so yummy! We can't get enough, we have had it for about 4 meals..it's finally gone...boo!
I don't have a real name for this recipe because it is kind of a mix of what we had in our fridge and just what I thought sounded yummy. 
But... I'm calling it Sweet Potato Hash!

Sweet Potato Hash on Flatbread
Ingredients:
2 Sweet Potatoes cut in thin disks
2c Corn
1 14.5oz Can Black Beans
Goat Cheese
4 Eggs
Salt & Pepper
Rosemary
Thyme
Whole-wheat Flatbread

Recipe:
Roast sweet potatoes at 425 degrees for 20-30 minutes, just until soft. Stir corn and black beans in a saute pan until heated and add sweet potatoes, salt & pepper, rosemary, and thyme to taste. In a skillet, fry up the eggs flipping and cooking just a few moments on each side so they egg is still runny in the middle. Heat the flatbread slightly in a pan just to make it warm and soft, then assemble with the hash, put the egg on top and crumble goat cheese over all of it.
